Āghūz Kūkū [Walnut & Herb Frittata]

Walnut & Herb Frittata from Mazandaran

Origin: Regional Specialty (Shōmal)

Along the forested coast of the Caspian Sea, autumn brings the annual walnut harvest to Mazandaran's orchards. Āghūz Kūkū, named after āghūz, the local word for walnut, puts fresh nuts front and center. Finely ground walnuts are folded with grated potato, caramelized onions, fresh herbs, cinnamon, and eggs into an aromatic skillet cake. Right before serving, it's drizzled with tart pomegranate molasses, the region's signature sweet-and-sour accent, to balance the rich nuts.
