Lima Beans & Dill from Gilan | vegan option

Origin: Regional Specialty (Shomāl)

In Gilan, Bāghālī Ghātogh is on almost every table. It’s a fast, fragrant stew powered by Gilan’s signature trio: local wax beans (pāch-bāghālī), fresh dill, and garlic. Peeled lima beans are sautéed in butter with garlic, turmeric, and dill, then simmered in a saffron broth until tender. Poached eggs finish it off right in the pot, perfect served over kateh with aged pickled garlic (sīr torshī).
